White Kimchi Recipe: A Delightful Twist on a Classic


Kimchi is a beloved fermented food known for its gut health benefits and vibrant flavor. As I explored ways to manage my psoriasis, I learned that nightshades (Learn more about nightshades here) can contribute to inflammation, which complicates autoimmune conditions. To better manage this, I decided to reduce my intake of nightshade vegetables.

Nightshade is a family of plants that includes tomatoes, eggplant, potatoes, and peppers.

While fermented foods like kimchi and sauerkraut are praised for their health benefits, traditional kimchi, with its spicy red pepper powder, can be problematic for some. That's why I discovered Baik Kimchi (White Kimchi)—a milder, non-spicy alternative that’s gentle on the digestive system and perfect for those who prefer a less spicy option, including kids!


I’m excited to share a fantastic Baik Kimchi recipe from one of my favorite chefs, Maangchi (Check out her Baik Kimchi recipe here.) This version uses pear as a base, adding a tangy and sweet twist. Though the recipe includes red bell peppers, which are nightshades, I sometimes omit them to suit my needs, but they can enhance the dish’s visual appeal if you’re comfortable with them.
